I have the hardest time getting my older son to eat his meals during mealtime. I have no doubt that any number of parents out there face a similarly daunting task when it comes time to feed their own kids.
SO I strive to be creative in a way that will entice a quick eating session so I don’t have to sit at the table for an hour at breakfast. Whose got Photo:time for that? One thing I do know is that a quesadilla is a pretty good bet. So I thought, heck lets throw an egg in there and call it breakfast. So that’s what I did, and that is how this recipe was born. Let's make a breakfast quesadilla!
Ingredients
- 1 Flour tortilla
- 1-2 Egg
- 1/2 cup shredded cheddar
cheese
- ½ tablespoon cooking fat
(butter or oil) optional
To Make
Heat a pan on medium heat. Add the tortilla and heat for a minute on each side. While the tortilla is heating whisk the egg with a fork for 30-60 seconds. Shred the cheddar cheese. Remove tortilla and add the egg to the pan doing your best to make a circle about the size of the tortilla. Cook…
