Frosted Thoughts

Oxnard—Okay, it’s time to retool and get ready for Christmas and Chanukah at the Frost house, so there is no rest whatsoever.

IRST things first, we need to finish the turkey that I spent last Thursday cooking all day. Now I share a lot of the same sentiments many others do about leftovers. Take heart, you don’t need to redo Thanksgiving on your dinner plate over and over. There are alternatives.

For example, I am going to defrost some of the bird tonight and make turkey chili. It’s simple and delicious, and it is a good meal that is filling.

Okay, I am going to get out the pot and add turkey meat with some diced tomatoes, jalapeno, and onion (you can buy this at the store in a can). From there, I will add some chili beans and chili powder. I also add ground cumin and coriander to the mixture and let it simmer until the meat is saturated.

If you are like me and need to cut down on carbs after the holiday, you can do this easily. When making this dinner, omit the beans and fill it full of veggies that you enjoy. Personally, I like…
